University Diploma in Wine Tasting Aptitude

puce OBJECTIVE:  wine tasting training.
The education offered in the D.U.A.D. course comprises, on the one hand, theoretical classes that cover grapes to wine, and on the other hand, practical olfactory exercises for analytical and descriptive tasting.  The participants acquire precise knowledge and abilities concerning wine-growing,  wine and its evaluation.


 puce PEDAGOGY: Professors and professionals
The contributors are specialists in their field of research and/or intervention.  Those participating in this course are:   MM Ph. DARRIET, D. DUBOURDIEU, G. de REVEL, K. VAN LEEUWEN, Ph. ROUDIE Emeritus Professor at the Université Michel de Montaigne Bordeaux III, and numerous other French and foreign specialists.

 

puce ORGANIZATION: adaptability to the work week
This 166 hour programme is offered in two weekly sessions, on Mondays from 9 A.M. to 12.30 P.M. and Fridays from 2 P.M. to 5 P.M., so that it can be easily integrated into the work week.  The D.U.A.D. begins on October 10, 2011 and ends on Friday, May 18, 2012.

 

 puce ADMISSION: selection is based on one's application

Successful completion of one's baccalauréat (A-levels) is required to submit an application.  A registration form in support of one's application must be filled out and will be considered with the greatest care.
Application deadline for the 2012 term is May 31, 2011.

 puce OBTAINING THE DIPLOMA:
Participants can sit for exams, if they so desire and on the condition of having attended classes, with the aim of obtaining the Diploma. There are two phases to these examinations, a mid-term exam in January and a final exam.  Each exam consists of a written and practical portion. 

All other participants are given a certificate of completion.

The list of people who are awarded the D.U.A.D. is transmitted to numerous professional organizations in the wine industry (Organizations for Defence and Management or ODG, Certification Organizations or OC, Inspection organizations or OI, The National Institute of Appellations of Origin or INAO, FranceAgrimer, The Inter-professional Council of Bordeaux Wines or CIVB, International competitions, etc…).
However, even though the D.U.A.D. gives its participants aptitudes which are recognized within the wine industry, it does not legally endow one with a profession or title.

 

 puce REGISTRATION:
The number of spaces is limited to 40.
Tuition fees are fixed at  4 531 € for the 2011/2012 academic year + university registration fees.


Pre-enrolment forms can be requested from the Continuing Education Office or downloaded and sent back before the 31st May that precedes the academic year for which you are enrolling.

Plant matter.
Vineyard management.
Soils and the quality of wines.
Grape maturation / The vintage year. 

 

Wine

 

The constituents of wine and their organoleptic characteristics.
The making, stabilization, and preservation of wine.
The making of and tasting methods for dessert wines.
Presentation of the different wine-growing regions in France and abroad.

 

Tasting

  

Elements of sense physiology and cognition.
The methodology of sensory analysis.
The rules of wine tasting.
Gustatory vocabulary and the universe of smell.
Individual sensitivity and learning.
Quality control by tasting.
Intensive, regular, and progressive wine tasting exercises.


A detailed class programme and the terms of examination will be provided upon request.

 

puce FOLLOWING THE DIPLOMA: wine tastings to continue your training
- The D.U.A.D. club, a wine tasting association open to D.U.A.D. diploma holders, organizes different events related to the training course.
