Objectives: To offer several options of orientation towards either research or the viti-vinicultural production sector:
Vocational option: Possible career prospects are in research departments and independent consultants, industrial and commercial companies within the wine industry (and perhaps the food industry), technical services within agricultural organizations (unions, inter professional committees, INAO, VINIFLHOR, CTIVV), Chambers of Agriculture, the Ministry of Agriculture, the Ministry of the Environment, missions for national and regional development for local, regional, or national collectivities, national and European Union authorities.
Research option: Career prospects are in research and development departments in companies within the wine industry, public organizations' fundamental research teams (Universities, INRA, CNRS, centres of research in food science in France and abroad), and entrance into a doctoral programme in the fields of oenology and ampelology.
Programme organization: This is a 2 year long programme divided into 4 semesters, corresponding to 120 European credits. Each semester is composed of 10 modules worth 3 credits and with both obligatory and optional modules and/or classes that can be chosen according to the speciality (option). During the 4th semester (S4), a work placement period, either in a laboratory or in a professional place of work, will be validated with the viva voca of a written dissertation.
Class organization: Classes are organized into obligatory and optional modules which are then distinguished as either core syllabus or speciality modules.
Common core syllabus: The first year (S7, S8) is aimed at allowing students to acquire basic skills in the field of vine and wine science, to become familiarized with research or with research/development. A pre-specialization via optional modules allows students to be progressively orientated towards a speciality: Vocational or Research options.
1st year classes in the Master's Programme (M1) give students, depending on the option chosen, general knowledge in the fields of Chemistry, Microbiology or Biology and allows them to become aware of issues in the specific fields of vine and wine.

During the 2nd year, the 3rd semester (S9) is made up of a core syllabus with the mention "Biology, Health", and there is a very clear distinction between the Research or Vocational options. The vocational option allows students to be orientated towards oenology or viti-vinicultural environment.
With the Research option, students will be able to deepen their understanding of the chemistry of aromas, polyphenols and macromolecules, microbial ecology, fermentations, secondary metabolisms, membrane transfer, genetic, grape biochemistry, sensory analysis, according to the subject of the research project that they have planned on writing for the 4th semester.
During the 4th semester (S10), students will complete a dissertation project either in a company or in a laboratory, according to their chosen option.
Vocational option: During the 3rd semester (S9), students must find work placement in a company. Projects are defined together with a professor from the programme who will make sure the project is feasible and at the required level in terms of work to be performed and proper training. Before the work placement period begins, at the start of the 4th semester, the project is carefully written out before the signing of the work placement agreement. Work placement in foreign countries is highly recommended to students.
Research option: During the 3rd semester (S9) (in the first year of the master's), candidates get in contact with the researchers « supervisors » and propose a work placement project subject in order to obtain an interview. We recommend that students obtain at least two interviews. At the end of these interviews, the pre-inscription form is returned indicating the list of work placements in the order of preference.
In the 4th semester (S10), during the work placement period, students are placed in the position of laboratory researchers. After having chosen their subject, their personal reflections should bring them to start taking initiatives for experimentation. On a scientific level, students cover subjects which are very specific to oenology (the science of wine) and ampelology (the science of vines) which are founded on fundamental knowledge of chemistry, microbiology, biochemistry, genetics, plant physiology, all of which have already been acquired.
For both options (research and vocational) the degree is validated with the viva voca of a written dissertation.

Examination terms and validation of the Master's degree: A semester is validated once the student has obtained an average mark higher than or equal to 10 out of 20 on all of the different modules. If this is not the case, the student conserves only the modules on which he/she obtained a mark superior or equal to 10 out of 20.
The first year of the master's is attributed to student who have separately validated both academic semesters, or who have obtained an average mark higher than or equal to 10 out of 20 on both semesters put together.
The second year of the master's is attributed to student who have separately validated both academic semesters, or who have obtained an average mark higher than or equal to 10 out of 20 on both semesters put together.
The Master's diploma « OEnology and Viti-Vinicultural Environment » is awarded to students who have validated both academic years.
Application forms: Pre-enrolment is done online from 1st March to 18 June included. Application forms must be postmarked no later than 22 June. Additional documents (marks received the current year) must be submitted no later than 10 July. For those wishing to be admitted directly into the 2nd year, Research option, pre-enrolment is done online between 1st March and 15 June included. This application form must be postmarked no later than 1st July. For foreign students, a prior admission request must be returned no later than 31 March (refer to the procedure on the university website : www.u-bordeaux2.fr
