The Bordeaux School of Oenology enjoys a long and rich history. The "Station Agronomique et Œnologique" was originally founded in 1880. In the continuity of studies performed by Louis PASTEUR on wine, it was first directed by Ulysse Gayon, who was Pasteur's student and later an assistant at the "Ecole Normale Supérieure".
United with the University of Bordeaux in 1916, the "Station Agronomique et Œnologique" consequently developed within the context of the Faculty of Science. The Pasturian tradition was continued by Professor Jean RIBEREAU-GAYON and Doctor Emile PEYNAUD, whose fifty year-long collaboration (1927-1977), with the University laboratories as well as numerous estates and wine-merchants, profoundly marked 20th century oenology.
In 1956, The "Ecole Supérieure d'Œnologie" was created and began educating its first oenologists. It would then become, since its creation in 1971, a part of the Université Bordeaux II under the name of the "Institut d'Œnologie". It continued to develop under the direction of Professor Pascal RIBEREAU-GAYON (1977-1997), and later Professor Yves GLORIES (1997-2005) when it took on the name of "Faculté d'œnologie" in 1995.

Its contributions to research (UMR Œnologie), Education (UFR Œnologie) and the transfer of knowledge (Continuing Education and services of Microflora and Amarante Process) maintain and continually develop the Bordeaux School of Oenology's worldwide reputation.
